Description

Portobello Curry Risotto — portobello mushrooms and arborio rice simmered in a coconut milk curry sauce with virgin coconut oil, scallions, minced ginger, garlic, pear tomatoes, and Chinese parsley. Served with maple pecan carrot coins.

Roasted Squash and Spinach Lasagna Rolls — butternut squash, baby spinach, Felix’s “Paleo Marinara Sauce”, tofu ricotta, and vegan parmesan cheese rolled in lasagna noodles. Served with maple pecan carrot coins.

Three Bean Roasted Vegetable Chili — served with jasmine rice.

Grilled Veggie Burger — 6-oz vegan patty grilled and topped with non-dairy smoked gouda cheese and sauteed mushroom and onion. Served with lyonnaise potatoes.

Vegetable Platter — butter pecan carrot coins, mixed vegetables, and lyonnnaise potatoes.
